Resumen : RESUMEN: El trabajo se desarrolla en tres capítulos. El primero de ellos corresponde a una revisión bibliográfica sobre energía y proteína en rumiantes. En el aparte de energía se aborda la partición energética, las pérdidas de energía en forma de metano (CH4), las exigencias de energía para mantenimiento y ganancia de peso y finalmente la calorimetría como metodología para estudiar el metabolismo energético. En el aparte de proteína se relacionan las diferentes formas de clasificar las fuentes de nitrógeno consumidas por el rumiante, y los factores que afectan su utilización por los microorganismos y el animal. El segundo capítulo tuvo por objetivo determinar el balance de energía (BE) y de nitrógeno (BN), así como la emisión de CH4 entérico en ganado mestizo consumiendo recursos arbóreos y agroindustriales. Para tal efecto se emplearon diez animales Brangus, que se alimentaron con cinco dietas basadas en heno de pangola (Digitaria decumbens) (60%) y un suplemento (40%) basado en maíz-soya (control), matarratón, semilla de algodón, pulpa de café y orujo de uva. Los recursos arbóreos y agroindustriales representaron el 37,5% del suplemento. La evaluación se realizó en dos períodos experimentales, asignando dos animales por dieta en cada período. La producción de CH4 no difirió entre las dietas cuando se expresó en L/kg de materia seca, materia orgánica y fibra detergente neutra (p>0,05). El valor medio de producción de CH4 fue 118,6 L/animal/d y representó el 4,2 y 5,9% de la energía bruta (EB) y digestible (ED), respectivamente. En el BE, sólo se registraron diferencias en la EB consumida; el menor valor se observó en el tratamiento con pulpa de café, respecto la dieta control y con orujo de uva. La ED, la energía metabolizable (EM) y la energía retenida (ER) promediaron el 71,4, 65,9 y 33,3% de la EB, correspondientemente. La pérdida de N en la orina fue menor (p<0,05) en la dieta incluyendo semilla de algodón respecto el control. El 55,8% del N consumido fue retenido. La incorporación de los recursos evaluados fue comparable con la dieta control, lo que supone que una inclusión del 15% de la dieta no altera el BE, el BN, ni la emisión de CH4. Finalmente, en el capítulo 3, se presentan los requerimientos de energía neta para el mantenimiento (ENm) y la ganancia de peso (ENg), así como la eficiencia de utilización de la EM para ambas funciones (km y kg). Para tal efecto se emplearon diez animales Brangus (peso vivo 240,7±23,1 kg) que recibieron una dieta basada en heno de pangola (Digitaria decumbens) y suplemento, en proporción 70: 30, aproximadamente. La producción de calor (PC) se cuantificó a diferentes niveles de alimentación (ad libitum, restricto y ayuno) a través del empleo de cámaras de respiración de circuito abierto. La ENm se determinó a partir de tres aproximaciones: 1) El valor de PC de ayuno entre las 00:00 y 06:00 horas, extrapolado a 24 horas (PCay24 ajustado); 2) A partir del intercambio respiratorio durante 24 horas de ayuno (PCay24); 3) Desde modelos de regresión lineal entre el logaritmo de la PC (y) y el consumo de EM (CEM) (x) (kcal/kg PCV0,75/día) en los niveles de alimentación ad libitum y restricto (PCV0,75: peso corporal vacío metabólico). El requerimiento de ENg (kcal/kg PCV0,75/día) se determinó a partir de tres aproximaciones: 1) A partir de la diferencia entre el CEM y la PC determinadas al nivel de alimentación ad libitum; 2) Desde la ecuación exponencial: ENg=aXb, donde a y b correspondieron al antilogaritmo del intercepto y la pendiente de la regresión lineal entre el logaritmo de la ganancia de peso vacío (GPV) (x) (kg) y el logaritmo de la energía retenida (ER) (kcal/kg PCV0.75/día) (y); 3) Desde la ecuación parabólica ENg=(b*z)+(c*z2), donde b y c se obtuvieron de la relación entre la GPV (kg) (x) y la ER (kcal/kg PCV0,75/día) (y). La eficiencia de utilización de la EM se calculó a partir de la relación EN/EM para mantenimiento y ganancia. Los requerimientos de ENm fueron 95,01, 80,4 y 83,3 kcal/kg PCV0,75, cuando determinados desde PCay24, PCay24 ajustado y por regresión, respectivamente. Los requerimientos de ENg fueron 104,5, 98,6 y 206,1 kcal/kg PCV0,75, cuando determinados por la diferencia EM-PC, la ecuación exponencial y parabólica, respectivamente. El km y el kg en promedio fue de 0,75 y 0,40, respectivamente. Se concluye que el requerimiento de ENm fue mayor al propuesto por la NRC, 77 kcal/PVC0,75, y que los requerimientos de ENg se encuentran por encima de lo reportado en la literatura.
ABSTRACT: The work is developed in three chapters. The first corresponds to a literature review on energy and protein in ruminants. In the energy section, the energy partition, the energy losses in the form of methane (CH4), the energy requirements for maintenance and weight gain and finally the calorimetry as a methodology for studying energy metabolism are addressed. In the protein section, the different ways of classifying the sources of nitrogen consumed by the ruminant are related, and the factors that affect their use by microorganisms and the animal. The second chapter aimed to determine the energy (EB) and nitrogen (NB) balance, as well as the emission of enteric CH4 in crossbreed cattle consuming shrubs and agroindustrial resources. For this purpose, ten Brangus animals were used, which were fed with five diets based on pangola hay (Digitaria decumbens) (60%) and a supplement (40%) based on corn-soybean (control), matarratón, cottonseed, coffee pulp and grape marc. shrubs and agroindustrial resources accounted for 37,5% of the supplement. The evaluation was carried out in two experimental periods, assigning two animals per diet in each period. The production of CH4 did not differ between diets when expressed in L/kg of dry matter, organic matter and neutral detergent fiber (p> 0,05). The average production of CH4 was 118,6 L/animal/d and represented 4,2 and 5,9% of the gross energy (GE) and digestible energy (DE), respectively. In the EB, only differences in the GE consumed were recorded; the lowest value was observed in the coffee pulp treatment, with respect to the control diet and grape marc. The DE, metabolizable energy (ME) and retained energy (RE) averaged 71,4, 65,9 and 33,3% of the GE, correspondingly. The loss of N in the urine was lower (p <0.05) in the diet including cottonseed compared to the control. The 55,8% of the N consumed was retained. The incorporation of the evaluated resources was comparable with the control diet, which means that an inclusion of 15% of the diet does not alter the EB, the NB, or the emission of CH4. Finally, in chapter 3, the net energy requirements for maintenance (NEm) and weight gain (NEg) are presented, as well as the efficiency of use of ME for both functions (km and kg). For this purpose, ten Brangus animals were used (live weight 240,7 ± 23,1 kg). Animals were fed a diet based on pangola hay (Digitaria decumbens) and supplement, in a proportion of 70:30, approximately. Heat production (HP) was quantified at different feeding levels (ad libitum, restricted and fasting) through the use of open circuit respiration chambers. The NEm was determined by three methods: 1) The fasting HP value between 00:00 and 06:00 hours, extrapolated to 24 hours (adjusted PCay24); 2) From the respiratory exchange during 24 hours of fasting (PCay24); 3) From linear regression models between the logarithm of the HP (y) and the ME intake (MEI) (x) (kcal/kg PCV0.75/day) at ad libitum and restricted feeding levels (EBW0.75: empty metabolic body weight). The NEg requirement (kcal/kg EBW0.75/day) was determined by three methods: 1) From the difference between the MEI and the HP determined at the ad libitum feeding level; 2) From the exponential equation: NEg = aXb, where a and b corresponded to the intercept antilogarithm and the slope of the linear regression between the logarithm of the empty weight gain (EWG) (x) (kg) and the logarithm of the retained energy (RE) (kcal/kg EBW0.75/day) (y); 3) From the parabolic equation NEg = (b * z) + (c * z2), where b and c were obtained from the relationship between the EWG (kg) (x) and the RE (kcal/kg EBW0.75/day) ( Y). The efficiency of ME utilization was calculated from the NE/ME ratio for maintenance and gain. The requirements of NEm were 95,01, 80,4 and 83,3 kcal/kg EBW0.75, when determined from PCay24, adjusted PCay24 and by regression, respectively. The NEg requirements were 104,5, 98.6 and 206,1 kcal/kg EBW0.75, when determined by the ME - HP difference, the exponential and parabolic equation, respectively. The km and kg on average were 0,75 and 0,40, respectively. It is concluded that the requirement of NEm was greater than that proposed by the NRC, 77 kcal/EBW0.75, and that the requirements of NEg are above those reported in the literature.
